Balbondigas: A Meatball Disaster

Well, not really as it fed me for the next four days thanks to my special Thai sauce, which should have a product rave one of these days. However, it didn’t come out as the original recipe must have envisioned, considering I wasn’t prepared with all the ingredients but had to cook something since the meat defrosted behind my back… and I was hungry.
But what the heck, I still have 3 lbs of ground meat in the freezer. Practice makes edible. Here’s the original recipe with notes after the — on how I mangled it. Kids, don’t try this at home.
Meatballs:
1 lb mince — check
1/3 cup raw white rice — check
1 egg — check
1/2 cup chopped parlsey — absent
salt and pepper to taste — forgot
Soup:
1 onion, chopped — check
1 clove garlic, smashed — forgot
1 tin chopped tomatoes — 1/4 C tomato soup instead
2 carrots, diced — 5 whole carrots instead
1 cup peas — 1 head broccoli instead
stock or water — check
1/2 cup cilantro — parmesan cheese instead
salt & pepper — tinancha ka ngunit kulang
