Almost Gluten-Free Oatmeal Cookies

Because brown rice flour is gluten-free. Remember that Cardbread post? Voila, here is the cookie attempt. Thing is, I merely replaced the normal flour with the rice flour, and it was a bit of a fiasco: the dough just wouldn’t stick. Dough! Who would’ve guessed? But of course, this is baking, a SCIENCE, and I should’ve done some research. Ended up throwing in some all-purpose flour in the end, and it managed to hold up.

And because Joe came home and was bewildered to find me creating something by myself in the kitchen, he instructed me to add nuts. A small price to pay to reassure him of his masculinity.
