Beef Caldereta

Joe bet me $50 (and lost) that he’s never made caldereta before. But I didn’t claim my winnings because of the unfair advantage of a photographic memory. (I took a snapshot and therefore remember.) Last time, though, it was lamb. This time it’s 100% beef! And I got all the optional stuff in there: olives, pickles, tabasco (except potatoes, which neither of us wanted to carry home from the grocery). Even calf liver cubes, which I didn’t realize was supposed to be chicken and mashed up to simulate canned liver spread, but that’s okay. (Really stinky, though.) So the sauce was a bit thin (could’ve used those potatoes, d’oh!) But it was really good. If your meat’s completely lean, you can eat leftovers straight from the fridge. Mmm.
